Method for Cold Dressed Dragon’s Beard Vegetables:

Step 1: Soak Dragon’s Beard Vegetables in cool water until they are rehydrated. Clean them thoroughly, usually soaking for about 40 minutes is enough; soaking for too long will make them less crispy.

Step 2: Mix oyster sauce, sesame oil, light soy sauce, salt, white sugar, vinegar, and minced garlic together, adding some mineral water (or cool boiled water) to make a sauce.

Step 3: Shred the cucumber and onion, and cut the coriander into sections, and set them aside.

Step 4: Finally, mix all the ingredients together, and your dish is complete… Finish by sprinkling with crushed peanuts. The peanuts should be roasted beforehand.
