Authentic Hubei Cuisine: Mama’s Favorite Dish

Ingredients for Mama’s Favorite Dish: Cabbage, Shredded Pork, Eggs, Glass Noodles, Carrots, Lao Gan Ma Chili Sauce.
Step 1: Shred the cabbage.


Step 2: Scramble the eggs and cut them into thin strips.


Step 3: Stir-fry the shredded pork with cooking wine and salt.


Step 4: Soak the glass noodles in hot water until soft, then rinse in cold water to prevent them from sticking together.


Step 5: Shred the carrots (photograph not taken). With all ingredients prepared, start stir-frying the cabbage.


Step 6: Since carrot strips are harder, add them first to the stir-fry.


Step 7: Then, add the glass noodles, shredded pork, and egg strips to the pan and stir-fry together. If the dish seems dry, do not add water; instead, season with salt, chicken essence, and Lao Gan Ma Chili Sauce.


Step 8: The dish is complete. Serve immediately!
